olive oil (divided, avocado oil)
Chicken

chicken breasts (boneless and skinless)
Garlic

Mushrooms

button mushrooms (halved)
Broth

chicken broth
Cornstarch

Cream Cheese

Light cream cheese (softened)
Parsley

Instructions
Heat 1 tablespoon of olive oil in a pan over medium-high heat.
Cook chicken until golden-brown, then set aside covered.
Sauté mushrooms until golden, add garlic, then cook briefly.
Mix cornstarch with water, add broth and cook until bubbling, then stir in cream cheese.
Return chicken to pan, spoon sauce over, garnish with parsley, and serve.
Notes
For a richer flavor, use heavy cream instead of light cream cheese.
