Ingredients

Canned Goods

  • 2 cans Chickpeas (Garbanzo Beans)

Vegetables

  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced

Broth & Condiments

  • 4 cups Vegetable Broth
  • 1/3 cup Tahini
  • 1/4 cup Fresh Lemon Juice

Herbs & Spices

  • 2 tablespoons Fresh Dill, chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Smoked Paprika or Chili Flakes (optional)

Instructions 

  • Sauté chopped onion, garlic, carrots, and celery in olive oil until tender.
  • Add chickpeas and vegetable broth; bring to a boil.
  • Reduce heat, stir in tahini and lemon juice, then simmer for 10 minutes.
  • Blend part of the soup for creaminess, then return to pot.
  • Stir in dill, season with salt, pepper, and paprika; serve warm.

Notes

This soup is best enjoyed with a slice of crusty bread or a fresh salad.
