Instructions
Season beef with salt, pepper, and garlic powder. Sear in olive oil until browned, then set aside.
In the same pan, sauté chopped onion and minced garlic until fragrant.
Add halved baby potatoes and sliced mushrooms; cook for a few minutes.
Pour in beef broth, heavy cream, and Dijon mustard; simmer until potatoes are tender and sauce thickens.
Return beef to the pan, cook for another 5 minutes. Garnish with chopped parsley before serving.
Notes
For a lighter version, substitute heavy cream with Greek yogurt or half-and-half.
