Instructions
Heat olive oil in a large pot and sauté onion for 5 minutes.
Add garlic and ginger; cook for 2 minutes until fragrant.
Stir in carrots and cook for 5 minutes.
Pour in broth, bring to a boil, then simmer for 20 minutes until carrots are tender.
Blend the soup until smooth, then stir in coconut milk and heat gently.
Season with salt and pepper, garnish with herbs, and serve.
Notes
For a spicier kick, add a pinch of cayenne pepper.
