A smooth, flavorful soup combining the sweetness of carrots with the warmth of ginger, perfect for a cozy meal.

Ingredients

Vegetables

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated ((or 1 teaspoon ground ginger))
  • 4 cups carrots, peeled and chopped
  • 4 cups vegetable broth ((or chicken broth))
  • 1 cup coconut milk
  • to taste Salt and pepper
  • optional Fresh cilantro or parsley, for garnish

Instructions 

  • Heat olive oil in a large pot and sauté onion for 5 minutes.
  • Add garlic and ginger; cook for 2 minutes until fragrant.
  • Stir in carrots and cook for 5 minutes.
  • Pour in broth, bring to a boil, then simmer for 20 minutes until carrots are tender.
  • Blend the soup until smooth, then stir in coconut milk and heat gently.
  • Season with salt and pepper, garnish with herbs, and serve.

Notes

For a spicier kick, add a pinch of cayenne pepper.
