3cupsbaby carrots or sliced carrots

Instructions
Boil potatoes in salted water until fork-tender (15–20 minutes). Drain and mash with butter, milk, and salt until smooth.
In a saucepan, add carrots, butter, brown sugar, salt, and water. Cover and simmer for 10–12 minutes until tender and glazed. Thicken for last few minutes.
Season chicken with salt, pepper, garlic powder, thyme, and rosemary. Sear in olive oil and butter 4–5 minutes per side until cooked through. Remove and set aside.
In the same pan, cook garlic 30 seconds, deglaze with chicken broth, add cream, Parmesan, and Dijon. Simmer until slightly thickened (3–5 minutes).
Return chicken to pan, spoon sauce over, and simmer 2 minutes. Serve mashed potatoes and carrots with sauce, garnished with herbs.
Notes
For extra flavor, add a pinch of cinnamon or thyme to the carrots or sauce.
