A bright and creamy pasta dish combining fresh lemon flavors with tender beef and al dente spaghetti, perfect for a quick and flavorful meal.

Ingredients

Pasta

  • 400 grams Spaghetti or linguine
  • 1 cup Reserved pasta cooking water
  • 2 large Fresh lemons (zest and juice)
  • 1 cup Parmigiano Reggiano cheese finely grated
  • 3 tablespoons Extra virgin olive oil
  • 1 teaspoon Black pepper freshly ground
  • to taste Salt

Instructions 

  • Bring a large salted pot of water to a boil, then cook the pasta until al dente, about 8-10 minutes. Reserve 1 cup of pasta water and drain.
  • While pasta cooks, zest and juice the lemons. Set aside the zest and juice.
  • In a skillet, heat olive oil over medium heat. Add reserved pasta water and simmer. Gradually add grated cheese, stirring until creamy. Mix in lemon juice and zest, then season with salt and pepper.
  • Add drained pasta to the sauce, tossing to coat. Serve immediately with extra cheese and pepper if desired.

Notes

Use freshly grated cheese for the best flavor and texture.
