400gramsSpaghetti or linguine
1cupReserved pasta cooking water
2largeFresh lemons(zest and juice)
1cupParmigiano Reggiano cheese finely grated
3tablespoonsExtra virgin olive oil
1teaspoonBlack pepper freshly ground
to tasteSalt
Instructions
Bring a large salted pot of water to a boil, then cook the pasta until al dente, about 8-10 minutes. Reserve 1 cup of pasta water and drain.
While pasta cooks, zest and juice the lemons. Set aside the zest and juice.
In a skillet, heat olive oil over medium heat. Add reserved pasta water and simmer. Gradually add grated cheese, stirring until creamy. Mix in lemon juice and zest, then season with salt and pepper.
Add drained pasta to the sauce, tossing to coat. Serve immediately with extra cheese and pepper if desired.
