A delicious and hearty vegan soup with bright lemon flavor and creamy coconut milk, perfect for a comforting meal.

Ingredients

Canned Goods

  • 1 can chickpeas, drained and rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 large lemon, juice and zest
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • for garnish Fresh parsley

Instructions 

  • Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft.
  • Add chickpeas, cumin, and vegetable broth. Bring to a boil, then simmer for 20 minutes.
  • Remove from heat and stir in coconut milk, lemon juice, and zest. Blend until smooth.
  • Season with salt and pepper. Serve hot, garnished with parsley.

Notes

For a creamier texture, blend only half of the soup.
