A delicious and hearty vegan soup with bright lemon flavor and creamy coconut milk, perfect for a comforting meal.
Ingredients

Instructions
Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft.
Add chickpeas, cumin, and vegetable broth. Bring to a boil, then simmer for 20 minutes.
Remove from heat and stir in coconut milk, lemon juice, and zest. Blend until smooth.
Season with salt and pepper. Serve hot, garnished with parsley.
Notes
For a creamier texture, blend only half of the soup.
