Ingredients

Protein

  • 1 lb chicken breasts (boneless and skinless)

Vegetables

  • 2 cups broccoli (chopped)
  • 1 cup grape tomatoes (halved)
  • 0.5 cup sun-dried tomatoes (chopped)

Dairy

  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 0.5 cup Parmesan cheese (shredded)

Oils & Seasonings

  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste Salt and pepper

Instructions 

  • Cook chicken in olive oil until golden, about 5-7 minutes per side. Remove and set aside.
  • Sauté garlic and broccoli for 3 minutes. Add tomatoes and cook 2-3 minutes.
  • Whisk in heavy cream and Italian seasoning; simmer 2 minutes until thickened.
  • Return chicken to skillet, coat with sauce, and simmer 3 minutes. Top with Parmesan cheese before serving.

Notes

Use fresh garlic for best flavor. Adjust seasoning to taste.
