Chicken and Oil

boneless skinless chicken breasts (sliced in half)

Vegetables and Liquids

sun-dried tomatoes

Kalamata olives (sliced)

Instructions
Mix flour, spices, and half the salt and pepper in a bowl.
Season chicken, dredge in flour mixture, then sear in 2 tbsp olive oil until cooked through. Set aside.
In the same pan, toast garlic, sun-dried tomatoes, olives, and mushrooms for 3-5 minutes.
Add cream, stock, Parmesan, spinach, and seasonings. Simmer until thickened, then return chicken to cook through.
Adjust seasonings, serve warm, and store leftovers in fridge for up to 4 days.
Notes
For extra flavor, sprinkle with fresh herbs before serving.
