A flavorful and creamy pesto chicken rice bowl that's quick to prepare and perfect for a satisfying meal.
Ingredients

boneless, skinless chicken breasts
(cut into bite-sized pieces)

olive oil

garlic

heavy cream

basil pesto
(homemade or store-bought)

grated Parmesan cheese

cooked white or brown rice

cherry tomatoes

baby spinach

Salt and black pepper
(for seasoning)

a squeeze of lemon juice
(for brightness)
Instructions
Season chicken with salt and pepper. Cook in olive oil until golden and cooked through, then set aside.
Sauté garlic in the same skillet for 30 seconds. Add heavy cream, pesto, and Parmesan, whisk until thickened.
Return chicken to skillet, add spinach and cherry tomatoes, simmer for 2-3 minutes.
Serve the sauce over rice, garnish with extra pesto, Parmesan, or lemon as desired.
Notes
For extra flavor, drizzle lemon juice or add more pesto on top before serving.
