A flavorful and creamy pesto chicken rice bowl that's quick to prepare and perfect for a satisfying meal.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 3/4 cup basil pesto (homemade or store-bought)
  • 1/4 cup grated Parmesan cheese
  • 2 cups cooked white or brown rice
  • 1 cup cherry tomatoes (halved)
  • 1 cup baby spinach
  • to taste Salt and black pepper (for seasoning)
  • optional a squeeze of lemon juice (for brightness)

Instructions 

  • Season chicken with salt and pepper. Cook in olive oil until golden and cooked through, then set aside.
  • Sauté garlic in the same skillet for 30 seconds. Add heavy cream, pesto, and Parmesan, whisk until thickened.
  • Return chicken to skillet, add spinach and cherry tomatoes, simmer for 2-3 minutes.
  • Serve the sauce over rice, garnish with extra pesto, Parmesan, or lemon as desired.

Notes

For extra flavor, drizzle lemon juice or add more pesto on top before serving.
