Enjoy a rich and flavorful Tuscan chicken served over rice or pasta, packed with creamy sauce, sun-dried tomatoes, and spinach.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 0.5 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 0.5 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • as needed Cooked rice or pasta for serving

Instructions 

  • Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes per side until cooked through. Remove and set aside.
  • In the same skillet, sauté minced garlic for 1 minute. Add sun-dried tomatoes and spinach; cook until spinach wilts.
  • Pour in heavy cream, bring to a simmer, then stir in Parmesan cheese until melted.
  • Slice cooked chicken and return to skillet, coating with sauce. Serve over rice or pasta.

Notes

For a lighter version, use half-and-half instead of heavy cream.
