Instructions
Prepare three shallow dishes: milk, shredded cheese, and crushed Ritz crackers seasoned with salt, pepper, and parsley.
Slice chicken if thick, then dip each piece into milk, coat with cheese, and press into cracker crumbs.
Place coated chicken in a greased baking dish, sprinkle with leftover crumbs, cover with foil, and bake at 400°F (200°C) for 35 minutes. Remove foil and bake 10-15 minutes until golden.
Meanwhile, melt butter, stir in cream of chicken soup and sour cream to make a sauce. Serve over chicken or on the side.
Notes
For easier crushing, put crackers in a zip-top bag and roll with a rolling pin.
