Instructions
Slice beef into thin strips, toss with cornstarch, egg white, salt, and pepper; let sit 10 minutes.
Fry beef in hot oil until golden and crispy, about 3-4 minutes per batch; drain on paper towels.
Stir-fry garlic and ginger in sesame oil, add bell peppers, then sauces, honey, sugar, chili flakes, and vinegar; simmer and thicken with slurry.
Add crispy beef to sauce, toss gently to coat, then garnish with sesame seeds, spring onions, and chili slices.
Notes
For extra crunch, fry the beef twice and let it rest between fryings.
