Instructions
Coat chicken pieces with eggs and soy sauce, then dredge in cornstarch. Rest for 5–10 minutes.
Fry chicken in hot oil until golden and cooked through, then drain on paper towels.
Combine honey, soy sauce, garlic, ginger, rice vinegar, and water; simmer. Add cornstarch slurry and stir until thickened.
Add crispy chicken to sauce, toss to coat, then garnish with sesame seeds and scallions. Serve immediately.
Notes
For extra crispiness, double fry the chicken.
