Enjoy these crunchy, flavorful chicken strips coated with coconut for a tropical twist.

Ingredients

  • 1 piece Jumbo Whole Egg
  • 1 tablespoon Coconut Oil
  • 8 tablespoons Coconut Flour
  • 8 tablespoons Coconut Flakes
  • 2 pounds Chicken Breast (Trimmed and cut into strips)

Instructions 

  • Set out 3 bowls.
  • Mix egg and melted coconut oil in one bowl.
  • Place coconut flour in second bowl.
  • Put coconut flakes in third bowl.
  • Cut chicken into strips.
  • Dunk chicken strips in coconut flour, then egg mixture, then coconut flakes.
  • Arrange on baking sheet and bake at 400°F (204°C) for 15-20 minutes.

Notes

For extra crunch, double coat the chicken strips.
