Crockpot Beef Stew Recipe

A hearty and flavorful beef stew cooked slowly to tender perfection, perfect for cozy dinners.

Ingredients

olive oil

  • 2 tablespoons olive oil (divided)

beef cubes

  • 2 pounds boneless stewing beef cubes (or chuck)
  • 0.5 medium onion medium onion (chopped)
  • 6 cloves garlic (minced)
  • 1 pound Yukon Gold potatoes (peeled & diced)
  • 4 large large carrots (peeled & cut into large pieces)
  • 3 stalks celery (chopped)
  • 3 cups beef broth
  • 6 ounces tomato paste (see note)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • to taste pepper
  • 3 bay leaves bay leaves
  • 2 tablespoons cornstarch (optional)

Instructions 

  • Sear half the beef in 1 tablespoon of oil until browned, then transfer to the slow cooker. Repeat with remaining beef.
  • Cook onion in skillet for 3-4 minutes, add garlic, then transfer to the slow cooker.
  • Add remaining ingredients (except bay leaves and cornstarch) to the slow cooker and stir well.
  • Add bay leaves, cook on low for 10 hours until beef is tender.
  • Optional: Mix cornstarch with cold water, stir into stew, and cook for 10 minutes to thicken.

Notes

For a thicker stew, add cornstarch mixture at the end.
