Instructions
Heat olive oil, sauté onion and carrots for 3 minutes. Add garlic, ginger, spices, and cook 1 minute.
Add broth, tomatoes, lentils, potatoes, and kale. Season and simmer for 30 minutes until lentils are tender.
Adjust salt, squeeze lime over soup, and serve hot with optional toppings.
Notes
For added flavor, garnish with chopped scallions or a dollop of yogurt.
