1/2cupmixed nuts (almonds, walnuts, cashews)
1/2cuprolled oats
1/4tspground cinnamon
1tsplemon zest
1tbspmaple syrup (if needed)
Instructions
If dry, soak dates in warm water for 5 minutes, then drain.
Add dates, nuts, and oats to a food processor; pulse until coarse and sticky.
Mix in cinnamon and lemon zest; pulse briefly to blend.
If mixture is crumbly, add maple syrup and pulse until cohesive.
Form into 1-inch balls and place on parchment; chill for 15 minutes.
