Dry ingredients

Instructions
Blend oats, milk, banana, egg, baking powder, vanilla, cinnamon (if using), and salt until smooth. Let sit for 5 minutes.
Heat a non-stick skillet with butter or oil over medium heat.
Pour 1/4 cup batter for each pancake; cook 2-3 minutes until bubbles form and edges set.
Flip and cook for another 2 minutes until golden brown.
Repeat with remaining batter, then stack and top with sliced banana and maple syrup.
Notes
For fluffier pancakes, let the batter rest before cooking.
