Enjoy these wholesome and easy-to-make banana oatmeal pancakes, perfect for a nutritious breakfast or snack.

Ingredients

Dry ingredients

  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon ((optional))
  • Pinch salt

Wet ingredients

  • 1 cup milk (any kind, dairy or plant-based)
  • 1 large ripe banana
  • 1 large egg

For cooking

  • as needed butter or oil (for frying)

Toppings

  • sliced banana banana, for topping
  • maple syrup for serving

Instructions 

  • Blend oats, milk, banana, egg, baking powder, vanilla, cinnamon (if using), and salt until smooth. Let sit for 5 minutes.
  • Heat a non-stick skillet with butter or oil over medium heat.
  • Pour 1/4 cup batter for each pancake; cook 2-3 minutes until bubbles form and edges set.
  • Flip and cook for another 2 minutes until golden brown.
  • Repeat with remaining batter, then stack and top with sliced banana and maple syrup.

Notes

For fluffier pancakes, let the batter rest before cooking.
