This quick and delicious beef and vegetable skillet combines fresh ingredients and bold flavors for a satisfying dinner in no time.

Ingredients

Meat

  • 1 lb Ground beef (Choose lean for less fat)

Vegetables

  • 2 cups Bell peppers (Mix of colors)
  • 1 cup Onion (Chopped)
  • 2 cloves Garlic (Minced)
  • 1 medium Zucchini (Sliced)
  • 2 medium Carrots (Thinly sliced)

Seasonings & Sauces

  • 1 tbsp Olive oil (For cooking)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Paprika
  • 2 tbsp Soy sauce
  • 1 tsp Dried herbs (oregano or thyme)
  • 1 cup Cherry tomatoes (Halved)
  • 1/4 cup Fresh parsley or cilantro (Chopped)
  • 1/4 tsp Red pepper flakes (To taste)

Instructions 

  • Heat olive oil in a large skillet over medium heat.
  • Add ground beef and cook until browned, then remove and set aside.
  • Sauté onions, garlic, bell peppers, zucchini, and carrots until tender.
  • Return beef to the skillet, add soy sauce, herbs, salt, pepper, and red pepper flakes; cook for 3-5 minutes.
  • Stir in cherry tomatoes and cook for another 2 minutes. Garnish with parsley or cilantro before serving.

Notes

For a lower sodium option, reduce soy sauce and salt accordingly.
