Instructions
Heat olive oil in a large skillet over medium heat.
Add ground beef and cook until browned, then remove and set aside.
Sauté onions, garlic, bell peppers, zucchini, and carrots until tender.
Return beef to the skillet, add soy sauce, herbs, salt, pepper, and red pepper flakes; cook for 3-5 minutes.
Stir in cherry tomatoes and cook for another 2 minutes. Garnish with parsley or cilantro before serving.
Notes
For a lower sodium option, reduce soy sauce and salt accordingly.
