A quick and flavorful one-pan meal combining seasoned beef, beans, and cheese, topped with sour cream and green onions.

Ingredients

Meat

  • 1 lb ground beef
  • 1 oz package taco seasoning
  • 1 cup water
  • 1 cup chunky salsa
  • 15 oz can black beans, rinsed and drained

Tortillas

  • 4 6 inch soft flour tortillas, sliced into 1-inch strips
  • 1 cup shredded Mexican blend cheese
  • 2 cup sour cream
  • 4 cup sliced green onions

Instructions 

  • Brown the beef in a large skillet until no longer pink, then drain excess fat.
  • Add taco seasoning, water, salsa, and beans; cook for 3-5 minutes until sauce thickens.
  • Stir in tortilla strips, then sprinkle with cheese and let melt off heat.
  • Top with sour cream and green onions before serving.

Notes

For extra flavor, add a squeeze of lime or chopped cilantro.
