Ingredients

Meat

  • 1 pound Beef sausage (Choose high-quality sausage for rich, savory flavor.)
  • 2 medium Russet potatoes (Dice small for quick cooking.)
  • 2 tablespoons Olive oil (Use a good drizzle to help potatoes crisp up.)
  • 1 cup Bell peppers (Red or yellow peppers work best.)
  • 1 medium Onion (Thinly sliced.)
  • 2 cloves Garlic (Mince finely.)
  • 1 teaspoon Smoked paprika (Provides a subtle smoky kick.)
  • 1 tablespoon Fresh parsley (Chopped, for garnish.)

Instructions 

  • Cook the sausage in a skillet until browned, then remove and set aside.
  • In the same skillet, add olive oil and cook diced potatoes until crispy and golden.
  • Add sliced onions, bell peppers, and minced garlic; cook until vegetables are tender.
  • Return sausage to the skillet, sprinkle with smoked paprika, salt, and pepper; stir to combine and heat through.
  • Garnish with chopped parsley before serving.
