Fluffy and delicious blueberry pancakes perfect for a quick breakfast or brunch.

Ingredients

Dry ingredients

  • 1.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt

Wet ingredients

  • 1.25 cups whole milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup fresh or frozen blueberries
  • for cooking Butter or oil for the pan

Instructions 

  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients in a separate bowl.
  • Combine wet and dry, stir just until blended.
  • Gently fold in blueberries.
  • Cook pancakes on a greased skillet until bubbles form, then flip and cook until golden.
  • Serve warm with toppings of choice.

Notes

For fluffier pancakes, do not overmix the batter.
