Ingredients

Protein

  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces

Oil

  • 2 tablespoons olive oil, divided

Seasonings

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon paprika
  • ¼ to ½ teaspoon chili powder

Vegetables

  • 1 small yellow onion, thinly sliced
  • 3 cups broccoli florets, bite-sized
  • 1 medium zucchini, sliced into half-moons
  • 1 small yellow bell pepper, chunked
  • 1 small red bell pepper, chunked

Broth

  • ¼ cup low sodium chicken broth

Garnish

  • Fresh parsley for garnish

Instructions 

  • Season chicken with salt, pepper, and half the spice mix. Cook in 1 tbsp oil until browned, then set aside.
  • Sauté onions for 2 minutes, then add broccoli, zucchini, and peppers. Season with remaining spices and cook until crisp-tender.
  • Pour in chicken broth, return chicken to skillet, and cook for 1 minute until heated through. Garnish with parsley and serve.

Notes

Use fresh herbs for best flavor and adjust spice levels to taste.
