These delicious vegan no-bake bars combine crispy rice cereal, chocolate, and peanut butter for a quick and satisfying treat.

Ingredients

Crispy Rice Cereal

  • 3 cups crispy rice cereal (vegan)

Chocolate Chips

  • 1.5 cups chocolate chips (non-dairy)

Peanut Butter

  • 1 cup peanut butter (or nut or seed butter)

Maple Syrup

  • 0.5 cup maple syrup

Coconut Oil or Vegan Butter

  • 0.25 cup coconut oil or vegan butter

Instructions 

  • Line an 8x8-inch baking dish with parchment paper.
  • Mix crispy rice cereal in a bowl; melt chocolate, peanut butter, maple syrup, and coconut oil, then combine.
  • Pour mixture over cereal and stir to coat evenly.
  • Transfer to the dish and refrigerate until firm, about 1 hour.
  • Cut into bars and serve.
