  • 4 cups fresh carrots (Peeled and cut into 1-inch pieces)
  • 1 can coconut milk (Full-fat for creaminess)
  • 1 tablespoon fresh ginger (Grated)
  • 4 cups vegetable broth (Low-sodium)
  • 1 medium yellow onion (Chopped)
  • 3 cloves garlic (Minced)
  • 1 teaspoon ground turmeric (For color and flavor)

Instructions 

  • In a large pot, sauté chopped onion and minced garlic until fragrant and translucent.
  • Add chopped carrots, grated ginger, turmeric, and vegetable broth. Bring to a boil, then simmer until carrots are tender, about 15 minutes.
  • Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  • Stir in coconut milk, season with salt, black pepper, and red chili flakes. Simmer for 5 minutes.
  • Serve hot, garnished with chopped cilantro, toasted coconut flakes, and a squeeze of lime if desired.
