A comforting and creamy tomato rice soup that's quick to prepare and perfect for a cozy meal.

Boil-in-Bag Jasmine Rice or cooked rice

Whole peeled tomatoes (28 oz can)

Instructions
Melt butter in a large pot, add onion, garlic, and Italian seasoning. Sauté until fragrant, about 5 minutes.
Add tomatoes and chicken stock. Bring to a boil, then simmer for 30 minutes, covered.
Blend the soup until smooth using an immersion blender. Stir in cream, basil, and cooked rice.
Ladle into bowls, garnish with parmesan, basil, and ricotta if desired. Serve immediately.
Notes
You can substitute fresh basil with dried if needed. Adjust seasoning to taste.
