A comforting and creamy tomato rice soup that's quick to prepare and perfect for a cozy meal.

Ingredients

  • 1 bag Boil-in-Bag Jasmine Rice or cooked rice
  • 2 tablespoons Butter
  • 1 diced Onion
  • 2 cloves Minced garlic
  • 1 teaspoon Italian seasoning
  • 28 oz Whole peeled tomatoes (28 oz can)
  • 4 cups Chicken stock
  • 0.75 cup Half & half or heavy cream
  • 0.25 cup Fresh basil
  • to taste Salt and black pepper
  • for garnish Fresh parmesan cheese
  • optional Ricotta cheese

Instructions 

  • Melt butter in a large pot, add onion, garlic, and Italian seasoning. Sauté until fragrant, about 5 minutes.
  • Add tomatoes and chicken stock. Bring to a boil, then simmer for 30 minutes, covered.
  • Blend the soup until smooth using an immersion blender. Stir in cream, basil, and cooked rice.
  • Ladle into bowls, garnish with parmesan, basil, and ricotta if desired. Serve immediately.

Notes

You can substitute fresh basil with dried if needed. Adjust seasoning to taste.
