Ingredients

Meat

  • 1 pound ground beef (Choose lean for less grease.)

Vegetables

  • 2 cups bell peppers (A mix of red, yellow, and green.)
  • 1 medium zucchini (Diced.)
  • 1 medium onion (Chopped.)
  • 2 cloves garlic (Minced.)
  • 1 cup cherry tomatoes (Halved.)

Seasonings & Oils

  • 1 tablespoon olive oil (For sautéing.)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • to taste salt salt

  • 1/4 cup fresh parsley (Chopped, for garnishing.)

Instructions 

  • Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 5 minutes.
  • Add chopped onion and minced garlic; sauté until fragrant, about 2 minutes.
  • Stir in bell peppers, zucchini, cherry tomatoes, smoked paprika, oregano, salt, and black pepper. Cook for another 8 minutes until vegetables are tender.
  • Garnish with chopped parsley before serving.
