A rich and decadent dessert combining fudgy brownies with creamy cheesecake swirls, perfect for chocolate lovers.

Ingredients

Chocolate and Butter

  • 135 g dark chocolate (72% cocoa), coarsely chopped
  • 120 g unsalted butter, cold from refrigerator
  • 10 g Dutch process cocoa powder, sifted

Eggs and Sugars

  • 2 large eggs (approximately 100g without shells)
  • 135 g caster sugar (granulated sugar acceptable)
  • 65 g light brown sugar, packed
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract

Flour

  • 65 g all-purpose flour, sifted

Cheesecake Filling

  • 225 g full-fat cream cheese, room temperature
  • 60 g caster sugar
  • 1 large egg (approximately 50g without shell), room temperature
  • 1/4 teaspoon vanilla extract (optional)

Instructions 

  • Preheat oven to 350°F (180°C), grease pan, and line with parchment.
  • Gently melt chocolate and butter over simmering water, then stir in cocoa powder.
  • Mix eggs, sugars, and beat until light; add cooled chocolate mixture, salt, and vanilla.
  • Fold in sifted flour, pour batter into pan, and swirl with cheesecake mixture.
  • Bake for 22-28 minutes, cool, then lift out and cut into squares.

Notes

Ensure not to overmix the batter to keep brownies fudgy.
