Ingredients

Protein

  • 1 lb Chicken thighs or breasts (Bone-in or boneless)
  • 1 cup Long-grain white rice
  • 2 cups Chicken broth (Low-sodium recommended)
  • 4 cloves Fresh garlic (Minced)
  • 2 tbsp Olive oil
  • 0.25 cup Fresh parsley (Chopped)
  • 1 tbsp Fresh thyme (Chopped)
  • 1 tbsp Fresh rosemary (Finely chopped)
  • 1 tsp Salt (Season to taste)
  • 1 tsp Pepper (Season to taste)
  • 1 cup Bell peppers (Diced)
  • 1 cup Peas or green beans (Stir in near end)
  • 1 tbsp Lemon juice or zest (For brightness)

Instructions 

  • Season chicken with salt and pepper, then brown in olive oil until cooked through. Remove and set aside.
  • In the same pan, sauté garlic and herbs until fragrant.
  • Add rice and cook for 2 minutes, then pour in chicken broth. Bring to a boil.
  • Return chicken to the pan, add bell peppers, and simmer until rice is tender, about 15 minutes.
  • Stir in peas or green beans and lemon juice, cook for 2 more minutes, then serve.

Notes

For extra flavor, garnish with additional herbs or a squeeze of lemon before serving.
