These fluffy gluten-free waffles combine creamy cottage cheese with oats for a delicious and protein-packed breakfast.

Ingredients

Dry ingredients

  • 1 cup rolled oats (gluten-free)
  • 1 cup cottage cheese (preferably thick)
  • 2 eggs eggs
  • 0.5 tsp baking powder
  • 1.5 tbsp coconut oil
  • pinch salt
  • to taste honey (for serving)
  • to taste smoked salmon (for topping)
  • to taste creme fraiche (adds tangy richness)

Instructions 

  • In a blender, combine oats, cottage cheese, eggs, baking powder, salt, and coconut oil. Blend until smooth.
  • Preheat your waffle iron and lightly grease if needed.
  • Pour batter into the waffle iron and cook until golden brown, about 3-4 minutes.
  • Serve warm topped with smoked salmon, a dollop of creme fraiche, and a drizzle of honey.

Notes

For extra flavor, add herbs or spices to the batter.
