A hearty and flavorful vegetarian soup inspired by Greek flavors, perfect for a quick and nutritious meal.

Ingredients

Olive Oil

  • 2 tablespoons olive oil

Vegetable

  • 1 medium yellow onion, finely diced

Garlic

  • 3 cloves garlic, minced

Canned Goods

  • 2 cans chickpeas (15 oz or 425 g each), drained and rinsed

Broth

  • 4 cups vegetable broth (960 ml)

Spices & Herbs

  • 1 bay leaf bay leaf
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground cumin

Lemon

  • 1 lemon juice of 1 lemon

Salt & Pepper

  • to taste Salt, to taste
  • to taste Black pepper, to taste

Garnish

  • for garnish Fresh parsley, chopped

Instructions 

  • Heat olive oil and sauté the onion until soft.
  • Add garlic, oregano, and cumin; cook briefly until fragrant.
  • Stir in chickpeas and warm for one minute.
  • Pour in broth, add bay leaf, and bring to a boil. Simmer for 20 minutes.
  • Remove bay leaf, stir in lemon juice, season with salt and pepper, then serve garnished with parsley.

Notes

This soup is best enjoyed hot, garnished with fresh parsley and a drizzle of olive oil.
