Instructions
Heat olive oil and sauté the onion until soft.
Add garlic, oregano, and cumin; cook briefly until fragrant.
Stir in chickpeas and warm for one minute.
Pour in broth, add bay leaf, and bring to a boil. Simmer for 20 minutes.
Remove bay leaf, stir in lemon juice, season with salt and pepper, then serve garnished with parsley.
Notes
This soup is best enjoyed hot, garnished with fresh parsley and a drizzle of olive oil.
