Ingredients

corn

avocados

  • 2 medium avocados (Diced)

cherry tomatoes

  • 0.5 cup cherry tomatoes (Halved)

cilantro

  • 0.25 cup cilantro (Chopped)

lime juice

  • 2 tablespoons lime juice (Freshly squeezed)

Instructions 

  • Cook quinoa according to package instructions.
  • Grill chicken breasts until cooked through, then slice.
  • Mix diced avocados, cherry tomatoes, cilantro, and lime juice to make salsa.
  • Assemble bowls with quinoa, sliced chicken, corn, and avocado salsa.
