Instructions
Preheat oven to 325°F (160°C).
Season beef with salt and pepper, coat with flour, then brown in oil. Set aside.
Sauté onions, garlic, and carrots until lightly browned.
Add potatoes, broth, tomato paste, bay leaf, thyme, and Worcestershire. Scrape browned bits.
Return beef, bring to simmer, cover, and bake for 2-2.5 hours until tender. Remove bay leaf, season, and serve.
Notes
This stew tastes even better the next day. Feel free to add your favorite herbs for extra flavor.
