Ingredients

Yeast

  • 1 teaspoon active dry yeast

Sugar

  • 1 tablespoon granulated sugar

Water

  • 1 cup warm water (105-115°F / 40-46°C)

Flour

  • 3 cups all-purpose flour (plus more for dusting)

Salt

  • 1 teaspoon salt

Olive Oil

  • 2 tablespoons olive oil (plus more for greasing)

Instructions 

  • Activate the yeast: Mix warm water, sugar, and yeast. Let sit 5-10 mins until foamy.
  • Mix the dough: Combine flour and salt. Add yeast mixture and olive oil. Stir until shaggy.
  • Knead the dough: Knead on floured surface for 8-10 mins until smooth.
  • First rise: Place in greased bowl, cover, and let rise 1-1.5 hrs until doubled.
  • Shape and second rise: Punch down, shape, and let rise 30-45 mins. Preheat oven to 400°F (200°C).
  • Bake: Bake 30-40 mins until golden. Cool on wire rack before slicing.

Notes

For a crustier loaf, add steam during baking by placing a pan of hot water in the oven.
