Ingredients

Dry Lentils

  • 1 cup dry lentils (red or brown for a creamy texture)

Canned Tomatoes

  • 1 can canned tomatoes (whole or crushed)

Onion

  • 1 medium medium onion (finely chopped)

Garlic

  • 2 cloves cloves garlic (minced)

Vegetable Broth

  • 4 cups vegetable broth

Olive Oil

  • 2 tablespoons olive oil (for sautéing)

Ground Cumin

  • 1 teaspoon ground cumin

Smoked Paprika

  • 1 teaspoon smoked paprika

Salt

  • to taste salt

Black Pepper

  • to taste black pepper

Fresh Parsley or Cilantro

  • 2 tablespoons fresh parsley or cilantro (chopped)

Carrot

  • 1 medium medium carrot (diced)

Celery

  • 1 stalk stalk celery (chopped)

Lemon Juice

  • 1 tablespoon lemon juice (splash at the end)

Instructions 

  • Rinse lentils and set aside.
  • In a large pot, heat olive oil and sauté chopped onion, garlic, carrot, and celery until softened.
  • Add lentils, canned tomatoes, cumin, paprika, salt, and pepper. Pour in vegetable broth and bring to a boil.
  • Reduce heat and simmer for 20 minutes until lentils are tender.
  • Stir in lemon juice and chopped parsley or cilantro before serving.
