Ingredients

Dairy

  • 2 Large Eggs
  • 15 Ounces Ricotta Cheese (or Cottage Cheese (Low Fat Preferred))
  • 1 Tablespoon Italian Seasoning
  • 1 Tablespoon Chives (or other chopped vegetable(s))

Meat

  • 20 Ounces Ground Turkey (or Lean Beef (93/7))
  • 1 ½ Cups Pasta Sauce (Low Carb)
  • 2 No units Tortillas or Zucchini Strips (Low/No Carb (Net Zero))
  • 1 Cup Mozzarella Cheese
  • 3 Tablespoons Parmesan Cheese

Instructions 

  • Mix eggs, ricotta, Italian seasoning, and chives.
  • Brown and drain ground meat.
  • Stir in pasta sauce and simmer briefly.
  • Spray lasagna dish with non-stick spray.
  • Layer tortillas or zucchini strips in dish.
  • Spread ricotta mixture over layer.
  • Add meat mixture over ricotta layer.
  • Repeat layers, top with mozzarella and Parmesan.
  • Bake at 350°F (176°C) for 35-40 minutes.

Notes

Use lean meat for healthier options and adjust cooking time as needed.
