A quick and flavorful one-pot meal combining tender chicken, fresh vegetables, and pasta in a savory broth.

Ingredients

Protein

  • 1 pound Boneless Chicken Breasts (cut into bite-sized pieces)

Vegetables

  • 1 medium Zucchini (diced)
  • 2 medium Bell Peppers (colorful mix)
  • 1 cup Cherry Tomatoes (halved)
  • 2 cups Fresh Spinach

Pasta

  • 12 ounces Pasta (penne or fusilli) (one-pot friendly shapes)

Aromatics

  • 3 cloves Garlic (minced)

Liquids

  • 4 cups Chicken Broth

Oils & Fats

  • 2 tablespoons Olive Oil

Cheese & Dairy

  • 1/2 cup Parmesan Cheese (grated)

Herbs & Spices

  • 2 teaspoons Italian Seasoning
  • to taste Salt
  • to taste Pepper
  • 1/4 teaspoon Red Pepper Flakes (optional)

Instructions 

  • Sauté chicken in olive oil until cooked through, then set aside.
  • Add garlic and cook until fragrant, then add vegetables and cook for a few minutes.
  • Add pasta and chicken broth, then bring to a boil and simmer until pasta is tender.
  • Stir in spinach, Parmesan, Italian seasoning, red pepper flakes, salt, and pepper. Cook until spinach wilts.
  • Serve hot, garnished with extra Parmesan if desired.

Notes

Use one-pot pasta shapes for easier cooking and cleanup.
