beef chuck roast, cut into cubes
Vegetables

beef broth

tomato paste

Worcestershire sauce

Instructions
Optional: Sear beef cubes in a skillet until browned.
Add vegetables and seared beef to the crockpot.
Stir in tomato paste, Worcestershire sauce, bay leaves, thyme, salt, and pepper.
Pour in beef broth, cover, and cook on LOW for 8–10 hours.
If desired, mix cornstarch and water, stir into stew, and cook for 15–20 minutes to thicken.
Remove bay leaves, adjust seasoning, garnish with parsley, and serve.
Notes
For a thicker stew, add cornstarch slurry at the end.
