A hearty and flavorful beef stew cooked effortlessly in the crockpot, perfect for a comforting meal.

Ingredients

Meat

  • 900 g beef chuck roast, cut into cubes

Vegetables

  • 4 medium carrots, peeled and chopped
  • 4 medium potatoes, peeled and chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced

Broth and Sauces

  • 750 ml beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce

Seasonings

  • 2 bay leaves bay leaves
  • 1 teaspoon dried thyme
  • Salt, to taste Salt (Adjust to preference)
  • Black pepper, to taste Black pepper (Adjust to preference)

Thickening (Optional)

  • 2 tablespoons cornstarch (for thickening)
  • 2 tablespoons water (for slurry)

Garnish

  • Fresh parsley fresh parsley (for garnish)

Instructions 

  • Optional: Sear beef cubes in a skillet until browned.
  • Add vegetables and seared beef to the crockpot.
  • Stir in tomato paste, Worcestershire sauce, bay leaves, thyme, salt, and pepper.
  • Pour in beef broth, cover, and cook on LOW for 8–10 hours.
  • If desired, mix cornstarch and water, stir into stew, and cook for 15–20 minutes to thicken.
  • Remove bay leaves, adjust seasoning, garnish with parsley, and serve.

Notes

For a thicker stew, add cornstarch slurry at the end.
