A delicious and cozy pizza featuring roasted butternut squash, caramelized onions, and goat cheese, perfect for fall gatherings.

Ingredients

Vegetables

  • 1 small butternut squash, peeled and cubed
  • 1 tbsp tablespoon olive oil
  • 2 whole heads garlic (roasted)
  • 2 tbsp tablespoons unsalted butter
  • 2 tbsp tablespoons all-purpose flour
  • 1 cup cup milk
  • Salt and pepper to taste
  • 1 tsp teaspoon butter
  • 1 tsp teaspoon olive oil
  • 1 large onion, thinly sliced
  • 2 tsp teaspoons maple syrup
  • 2 pizza dough balls pizza dough
  • 1/4 cup cup baby spinach leaves
  • 4 oz ounces goat cheese
  • 2 tbsp tablespoons minced fresh rosemary

Prepared white sauce

Instructions 

  • Roast butternut squash and garlic until tender, then mash roasted garlic.
  • Prepare white sauce by whisking flour and butter, then gradually add milk and mashed garlic, season with salt and pepper.
  • Sauté onions with olive oil and maple syrup until caramelized.
  • Roll out pizza dough, spread white sauce, then top with roasted butternut squash, caramelized onions, spinach, goat cheese, and rosemary.
  • Bake pizza at 400°F (200°C) for 20-25 minutes until crust is golden.

Notes

For extra flavor, add a drizzle of honey or balsamic glaze before serving.
