Instructions
Preheat oven to 400°F (200°C). Toss chicken and vegetables with olive oil, salt, pepper, paprika, and herbs.
Mix honey and Dijon mustard; brush over chicken and veggies.
Arrange everything on a sheet pan in a single layer.
Roast for 20-25 minutes until chicken is cooked through and vegetables are tender.
Garnish with chopped parsley before serving.
Notes
For extra flavor, marinate the chicken in the honey Dijon mixture for 30 minutes before roasting.
