A simple and flavorful one-pan meal featuring tender chicken breasts roasted with sweet potatoes and Brussels sprouts, glazed with honey Dijon sauce.

Ingredients

Protein

  • 1.5 lbs boneless skinless chicken breasts (about 3–4 pieces)

Vegetables

  • 1 lb Brussels sprouts (trimmed and halved)
  • 2 medium sweet potatoes (peeled and cut into 1-inch cubes)

Other ingredients

  • 2 tbsp olive oil (divided)
  • 3 tbsp honey
  • 2 tbsp Dijon mustard
  • 2 cloves garlic (minced)
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ tsp smoked paprika (optional)
  • 1 tsp fresh rosemary or thyme (chopped (optional))
  • 1 tbsp fresh parsley (chopped (for garnish))

Instructions 

  • Preheat oven to 400°F (200°C). Toss chicken and vegetables with olive oil, salt, pepper, paprika, and herbs.
  • Mix honey and Dijon mustard; brush over chicken and veggies.
  • Arrange everything on a sheet pan in a single layer.
  • Roast for 20-25 minutes until chicken is cooked through and vegetables are tender.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, marinate the chicken in the honey Dijon mixture for 30 minutes before roasting.
