A quick and flavorful tomato basil soup perfect for a cozy meal. Made with simple ingredients and easy steps, it's a comforting classic.

Ingredients

Canned Goods

  • 28 oz can of whole tomatoes
  • 1 cup chicken broth
  • 1 TBSP brown sugar
  • 2 tsp onion powder
  • 8-10 leaves fresh basil leaves ((or dried leaves))
  • ¼ cup butter
  • ¼ cup heavy cream (optional)

Instructions 

  • Drain the tomatoes and place them in a microwave-safe bowl. Add broth, brown sugar, onion powder, and basil leaves. Stir gently.
  • Cover loosely and microwave for 5 minutes. Let sit for 3-4 minutes, then add butter and stir until melted.
  • Puree the soup with an immersion blender until smooth. If using a regular blender, blend in batches.
  • Pour into bowls, garnish with a drizzle of cream and a basil leaf if desired. Serve hot.

Notes

For a richer flavor, simmer the soup on the stove for 15 minutes instead of microwaving.
