A hearty and healthy vegetable soup perfect for a quick lunch or dinner, packed with fresh vegetables and flavorful herbs.

Ingredients

Vegetables

  • 1 tablespoon olive oil (for sautéing)
  • 1 large onion (diced)
  • 2 medium carrots (chopped)
  • 2 stalks celery (chopped)
  • 3 cloves garlic (minced)
  • 1 medium zucchini (chopped)
  • 1 medium bell pepper (chopped)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 cups spinach or kale (for added greens)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste salt salt (add a dash more at the end to bring out the tomato flavors)
  • to taste pepper pepper

Instructions 

  • Heat olive oil in a large pot over medium heat. Add diced onion, carrots, celery, and garlic; sauté until softened.
  • Add chopped zucchini, bell pepper, diced tomatoes, vegetable broth, thyme, and basil. Bring to a boil.
  • Reduce heat and simmer for 20 minutes. Add greens and cook for another 5 minutes.
  • Season with salt and pepper to taste. Serve hot.
