Instructions
Heat olive oil in a large pot. Add diced onion and cook until translucent, about 5-7 minutes.
Add carrots and celery; cook for 5 minutes, stirring frequently.
Stir in garlic, Italian seasoning, salt, and pepper; cook for 1 minute.
Add diced tomatoes, potatoes, green beans, and bay leaves. Pour in 6 cups of broth and bring to a boil.
Reduce heat, cover, and simmer for 15-20 minutes until vegetables are tender. Remove bay leaves.
Stir in frozen corn and peas; cook for 5 minutes until heated through. Adjust seasoning as needed.
