Ingredients

For the Fajita Chicken

  • 2 pieces chicken breasts, thinly sliced
  • 1 piece red bell pepper, sliced
  • 1 piece green bell pepper, sliced
  • 1 small onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ lime juice of lime

For the Garlic Bread

  • 1 large baguette or Italian bread loaf
  • ½ cup unsalted butter, softened
  • 3–4 cloves garlic, minced
  • 1 tsp dried parsley
  • 1–2 cups shredded cheese (cheddar, mozzarella, or a mix)

Instructions 

  • Cook the fajita chicken: heat oil, cook chicken with spices for 5–6 mins, add peppers and onion, then squeeze lime juice.
  • Preheat oven to 375°F (190°C). Slice bread, mix butter, garlic, parsley, spread inside.
  • Stuff the bread with chicken and veggies, sprinkle cheese, wrap in foil.
  • Bake for 15–20 mins until cheese melts, then open foil for 2–3 mins for crispiness.
  • Slice and serve hot with sides like sour cream or salsa.

Notes

For extra flavor, add chopped cilantro or a dash of hot sauce.
