Ingredients

Vegetables

  • 2 pieces red bell peppers (sliced in half lengthwise, stems intact)
  • 2 pieces yellow bell peppers (sliced in half lengthwise)

Protein

  • 2 pounds boneless chicken breast (diced)
  • 3 pieces yellow onions (diced)

Fats & Oils

  • 2 tbsp olive oil

Cheese

  • ½ cup mozzarella cheese (diced or shredded)

Spices & Seasonings

  • ½ tsp chili flakes
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp ground black pepper
  • 1 tsp salt

Toppings & Garnishes

  • 2 pieces limes (sliced)
  • 1 tbsp fresh cilantro (chopped)
  • 1 large avocado (diced)

Instructions 

  • Preheat oven to 375°F (190°C). Slice peppers in halves with stems intact and bake for 15 minutes.
  • Dice chicken and onions. Sauté onions in olive oil until golden, then add chicken and cook until done. Season with spices.
  • Divide the cooked filling among the peppers, top with mozzarella cheese, and bake for another 15-20 minutes until tender and cheese melts.
  • Serve warm topped with diced avocado, lime juice, and chopped cilantro.

Notes

For extra flavor, marinate chicken with spices before cooking.
