Instructions
Preheat oven to 375°F (190°C). Slice peppers in halves with stems intact and bake for 15 minutes.
Dice chicken and onions. Sauté onions in olive oil until golden, then add chicken and cook until done. Season with spices.
Divide the cooked filling among the peppers, top with mozzarella cheese, and bake for another 15-20 minutes until tender and cheese melts.
Serve warm topped with diced avocado, lime juice, and chopped cilantro.
Notes
For extra flavor, marinate chicken with spices before cooking.
