This hearty potato bread combines fluffy texture with a subtle potato flavor, perfect for sandwiches or toast.
Ingredients
Dough

all-purpose flour
(plus extra for dusting)

instant potato flakes

Instructions
Mix all dough ingredients in a stand mixer with a dough hook until combined.
Knead for 7-8 minutes until smooth; add flour if sticky.
Let dough rise in a greased bowl, covered, for 1 hour until doubled.
Shape into a loaf, place in a greased pan, and let rise for 30 minutes.
Bake at 375°F (190°C) for 35 minutes until golden and hollow-sounding.
Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a shiny crust, brush with beaten egg before baking.
