This hearty potato bread combines fluffy texture with a subtle potato flavor, perfect for sandwiches or toast.

Ingredients

Dough

  • 3 cups all-purpose flour (plus extra for dusting)
  • 0.75 cup instant potato flakes
  • 3 tablespoons sugar
  • 2 teaspoons instant yeast
  • 1.5 teaspoons salt
  • 1.75 cups water
  • 3 tablespoons melted butter or vegetable oil
  • 1 egg room temperature egg
  • optional additional beaten egg for brushing

Instructions 

  • Mix all dough ingredients in a stand mixer with a dough hook until combined.
  • Knead for 7-8 minutes until smooth; add flour if sticky.
  • Let dough rise in a greased bowl, covered, for 1 hour until doubled.
  • Shape into a loaf, place in a greased pan, and let rise for 30 minutes.
  • Bake at 375°F (190°C) for 35 minutes until golden and hollow-sounding.
  • Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a shiny crust, brush with beaten egg before baking.
