Enjoy these quick, fluffy pancakes packed with protein, banana, and chocolate flavor for a delicious breakfast or snack.

Ingredients

Dry ingredients

  • 1 cup oats
  • 2 tablespoons chia seeds
  • 2 eggs eggs
  • 1/2 cup egg whites
  • 1 overripe banana banana (mashed)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons vanilla or chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 3-4 tablespoons mini chocolate chips
  • 1-2 tablespoons milk or milk alternative (optional)

Instructions 

  • Blend all ingredients except chocolate chips until smooth.
  • Stir in chocolate chips evenly.
  • Heat a greased pan over medium-high heat, scoop batter, and cook 2-3 minutes per side.
  • Flip and cook 1-2 minutes until golden.
  • Serve topped with banana slices, peanut butter, chocolate chips, coconut, and syrup if desired.

Notes

For extra flavor, add a dash of cinnamon or top with fresh berries.
