These fluffy egg muffins are a protein-packed, easy-to-make breakfast perfect for busy mornings.

Ingredients

Eggs

  • 6 large eggs

Dairy

  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese

Vegetables

  • 1/3 cup chopped spinach
  • 1/4 cup diced red bell pepper

Herbs & Seasonings

  • 1 tablespoon finely chopped chives
  • to taste Salt and pepper

Other

  • Cooking spray or muffin liners

Instructions 

  • Preheat oven to 350°F (175°C). Prepare muffin tin with spray or liners.
  • Whisk eggs in a bowl, then mix in cottage cheese, cheddar, and parmesan.
  • Fold in spinach, red bell pepper, chives, salt, and pepper.
  • Divide mixture into muffin cups, filling about 3/4 full.
  • Bake for 20-25 minutes until set and golden. Cool slightly before serving.

Notes

Use silicone muffin liners for easy removal and cleanup.
