These fluffy egg muffins are a protein-packed, easy-to-make breakfast perfect for busy mornings.

Instructions
Preheat oven to 350°F (175°C). Prepare muffin tin with spray or liners.
Whisk eggs in a bowl, then mix in cottage cheese, cheddar, and parmesan.
Fold in spinach, red bell pepper, chives, salt, and pepper.
Divide mixture into muffin cups, filling about 3/4 full.
Bake for 20-25 minutes until set and golden. Cool slightly before serving.
