These tender muffins are infused with chai spices and topped with a sweet, crunchy crumb, perfect for cozy mornings or teatime.

Ingredients

Wet ingredients

  • 180 ml whole milk (steamed and infused with chai)
  • 2 tsp loose chai blend (or 2 chai tea bags)
  • 2 large eggs (room temperature)
  • 1/3 cup plain yogurt or sour cream
  • 2 tsp pure vanilla extract

Dry ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar (packed)
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp fine salt
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • a pinch ground black pepper

Topping

  • 2-3 tbsp coarse or turbinado sugar (for sprinkling)

Fats

  • 113 g unsalted butter (melted and cooled)
  • 2 tbsp neutral oil (canola or sunflower)

Instructions 

  • Steep chai in heated milk, then cool.
  • Preheat oven to 375°F (190°C) and line muffin tin.
  • Mix dry spices and flour. Whisk wet ingredients, combine with dry, then divide into muffin cups. Sprinkle with sugar.
  • Bake for 16–18 minutes, cool slightly, then serve warm or room temperature.

Notes

For extra flavor, sprinkle with additional sugar or serve with a dollop of cream.
